Grilled Zucchini-Corn Salad
serves 4
Ingredients
- 2 ea zucchin, 1/4 - 1/2 inch planks
- 2 ears corn
- 2 oz feta cheese
- 3 T lemon juice
- 4 t olive oil
- 2 t Dijon mustard
- 2 t honey
- 1/4 t granulated garlic
- 1 T fresh basil, fine chopped
- 1/2 C fresh basil, torn
Instructions
- Brush the zucchini and corn with olive oil, season with salt, then grill until charred.
- Whisk together the lemon juice, olive oil, mustard, honey, garlic, and chopped basil. Season to taste.
- Dice the zucchini, cut the kernals off the corn and mix them and the feta with the dressing.
- Plate and serve.
